Classic basil Pesto

Fresh basil lends dishes a sweet-spicy flavor that we can't get enough of. Here are our favorite recipes highlighting the herb

member of the mint family, basil lends a sweet-spicy flavor with hints of clove and anise to Italian-style sauces, pesto, and pasta. It's tomatoes' best partner, and also adds a refreshing accent to stronger Southeast Asian flavors. Here are our favorite recipes highlighting the fresh herb. 

Classic Basil Pesto The traditional Genoese sauce of basil, pine nuts, garlic, parmesan cheese, and olive oil is delicious on pasta, chicken, and fish. Catering to modern tastes, we've reduced the amount of olive oil while keeping the flavors true.

 Classic Basil Pesto Recipe

Ingredients

  • 1/2 cup basil leaves 
  • 4 large or 6 medium garlic cloves 
  • 1/3 cup shredded romano cheese 
  • 3 tablespoons pine nuts
  • 2 tablespoons minced parsley
  • 1/2 teaspoon salt 
  • 1/4 cup plus 1 tbsp. extra-virgin olive oil

    Preparation

  • Put basil in a mortar with garlic, romano cheese, pine nuts, parsley, and salt. Pound until smooth, then add olive oil and mix until smooth. Or, whirl all ingredients in a blender.
  • Note: Nutritional analysis is per tbsp.
