Grilled Dessert: Pineapple Right-Side-Up Cake
Grilling season is officially here, with the sun shining and providing plenty of light well into the evening, and Memorial Day is just around the corner, but why stop at dinner? Why not continue grilling right into the dessert course of your outdoor meal? I love the idea of a fresh pineapple slice caramelized by the grill, and served with toasted cake and ice cream, I think you’ll have a hard time going back to boring angel food cake and strawberries after this.
Grilled Pineapple Right-Side-Up Cake
1 prepared Absolutely Almond Pound Cake Mix
1 cup water
3/4 cup (1 1/2 sticks) butter, melted
1 fresh pineapple, cut into rings, halved
Caramel ice cream
Slice cooled pound cake into 1″ slices. Grill pineapple rings until heated through and grill pound cake slices until lightly browned. Serve pineapple on cake slices; top with ice cream. Makes 9 servings.
