Tuna is easy, fast and delicious for both lunch and dinner. While a creamy mayo filled tuna sandwich may taste delicious to some, we prefer our tuna chock full of veggies, fruit, sweet relish and creamy Greek yogurt. Layered atop a bed of leafy greens and it's pretty much the most satisfying and refreshing meal we'd ever need.
This particular recipe leans more toward the sweet side of the taste spectrum, but you could easily adjust for a more savory taste with spicy brown mustard or by adding some peppers into the mix.

Ingredients:
1 can chunk albacore tuna in water, drained
3 tablespoons sweet relish
2 tablespoons Fage Total 0% yogurt
1 tablespoon Dijon mustard
3 tablespoons each: diced red onion, chopped carrots, diced celery, chopped cucumber
3 tablespoons sliced red grapes
1 tablespoon dried cranberries
salt & pepper, to taste
3-4 cups fresh baby spinach or mixed leafy greens
Directions:
Drain albacore tuna and place in bowl. Add remaining ingredients through salt and pepper; mix thoroughly to combine.
Serve tuna salad on top of fresh baby spinach or mixed leafy greens.
