Sweet Potato Sausage Bites with Maple Glaze



Ingredients:
2 pounds sweet potato, peeled and cut into 2-inch cubes
1/2 pound sausage (spicy, Italian, or to your preference), cut into 1/2-inch pieces
2 tablespoons olive oil
salt & pepper to taste
Bamboo Picks
1/4 cup maple syrup
1 tablespoon red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon dry mustard
Directions:
Preheat the oven to 450 degrees.
Place sweet potato cubes on a lightly greased baking sheet. Drizzle potatoes with olive oil, and sprinkle with salt and pepper. Toss to coat. Bake for 20 minutes, turning cubes twice. If sweet potatoes have not yet browned after 20 minutes, bake a little longer.
Cook the sausage in a large nonstick skillet over medium-high heat, about 3-4 minutes on each side until browned. Drain on paper towels. 
Layer one sausage and one sweet potato, then secure with bamboo pick. Repeat until you've completely used the sausage and sweet potatoes.
On the side, mix the maple glaze ingredients and spread into the bottom of a 9 x 13 inch pan. Stand each one of the bites upright in the pan on top of the glaze and bake for about 10 minutes on 375 just to warm the glaze and coat the bottom of each bite.
Pull each bit out individually and line on a serving platter (discard the rest of the glaze) and you've got yourself a winner!
