Last night Mozzaikwall attended Chef Don William's Party. The food was out of this world. I rode the train from Brooklyn to Harlem to crave my appetite and I did not regret the long train ride. On his menu was everything plantain. I had plantain chips, which he made fresh from the oil. They were light and flaky. Never before have I had fresh plantain chips. He also made plantains cups with both sweet and salty filling. He has pork, cheese, chick pea, and cherry filling. What blew me away was his plantain muffin. I never had plantain muffin before. Banana muffin yes but plantains. I asked for his recipe but he did not want to share. I took some pictures of the muffins because I knew no one would believe me. I usually throw out my plantains when they turn black and the chef told me that is the right plantain to make these muffins.

Magalie -- you are as sweet as Chef DonClark plantain muffins -- yes with those black plantains. They are yummy aren't they!!! Again thank you!! Love the pictures.
