Ingredients
- 2 cups all purpose flour
- 1 1/4 cups sugar
- 1/4 teaspoons salt
- 1 teaspoons baking soda
- 4 tablespoons unsweetened cocoa
- 1/4 cups butter, melted & cooled
- 2 cups buttermilk
- 2 large eggs
- 1 teaspoons vanilla extract
- 2 tablespoons red food color
Cream Cheese Coconut Butter
- 4 ounces cream cheese, room temperature
- 1 stick butter, room temperature
- 1/2 teaspoon teaspoon cinnamon
- 1/4 cup finely chopped pecans
- 1/2 cup lightly toasted coconut
Directions
- Preheat waffle iron and lightly oil
- Mix the flour, sugar, salt, baking soda, and cocoa in a large mixing bowl.
- In mixer, mix the butter, buttermilk, eggs, vanilla extract and red food color.
- Spoon half of the flour mixture into mixer a little at a time
- Spoon 1/4 cup of the batter evenly onto the waffle iron and cook until desired doneness.
- Remove waffles as they cook and keep warm until all are cooked.
- Whip the cream cheese, butter , cinnamon, and pecans until blended.
- Serve waffles topped with some of the cream cheese pecan butter and cherry bourbon syrup on the side.
Cherry Bourbon Syrup
2 cups
½ pound jar dried cherries
½ cup sugar
½ cup Kentucky bourbon
1. In a large saucepan over moderate heat combine the cherries, sugar and bourbon; reduce this mixture by half or until syrupy and honey-like. Reserve and keep warm.
