
Ingredients:
4 large mint leaves
1 1/2 tsp sugar
Squeeze of lime
2 ozs watermelon juice (use a juicer or puree watermelon in a blender and strain)
Ice
3 1-inch cubes of watermelon
Splash simple syrup
Splash of soda water
Directions:
In a highball glass muddle mint leaves, sugar, squeeze of lime watermelon juice. Add ice to the glass. In a shaker, combine watermelon cubes, simple syrup and rum. Shake well and pour over contents in the highball glass. Mix well and add a splash of soda water. For a grown up version, add 2 ounces of rum.
