Apple Tuna Melts

1 small tart apple, finely diced (don’t bother peeling it)
1 Tbsp (15 mL) lemon juice
1 can (170 g) tuna, water-packed
3 Tbsp (45 mL) light mayonnaise
1 green onion, finely chopped
1/8 tsp (0.8 mL) freshly ground pepper
salt to taste
4 slices crusty, multigrain bread
grated cheese of your choice, about 2 Tbsp per slice
In medium bowl, toss apples with lemon juice. Add tuna, mayonnaise, green onion, pepper and salt (if using). Stir to combine well.
Preheat oven to broil. Spread apple tuna mixture evenly on 4 slices of a favourite crusty bread that has been lightly buttered. If preferred you can toast the bread first. Sprinkle each slice with grated cheese. Broil for 4–5 minutes to melt cheese. Serve immediately.
