Puff Pastry au Slaw
Serves: 8
Ingredients:
1 package puff pastry sheets
1 tablespoon fresh lemon juice
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon sugar
1 tablespoon poppy seeds
1 package or bunch radishes, thinly sliced
1 package prepared coleslaw vegetable mix containing red and green cabbage and carrots
1 egg
1 tablespoon milk
Special equipment: 2 nonstick muffin tins
1 tablespoon fresh lemon juice

1 tablespoon milk
Special equipment: 2 nonstick muffin tins
Directions:
1. Thaw puff pastry at room temperature for 30 minutes.
2. Meanwhile make the dressing by combining lemon juice, mayonnaise, sour cream, sugar, and poppy seeds in a small bowl.
3. In a larger bowl, toss radishes and coleslaw mix with dressing. Cover and chill.
4. Preheat oven to 400 degrees. Grease muffin tins. Beat egg with milk for egg wash and set aside.
5. On a lightly floured work surface, unfold a sheet of puff pastry and cut into four equal squares. Repeat with rest of puff pastry.
6. Press pastry squares into prepared muffin tins. Do not allow overlays of puff pastry to touch. Brush lightly with egg wash.
7. Bake until golden brown, 10-15 minutes. Allow to cool in muffin tins and gently remove when cooled.
8. Fill nests with slaw just before serving.
